Why did god only create two talking animals?

As far as I'm aware the only two scientifically proven animals to talk are the snake in the Garden of Eden and Mr Ed,neither of which really achieved much for society in general.Why wouldn't god create more animals that talk.Imagine how handy a seeing eye dog would be if it could talk as well.What about a racehorse that could tell you if he was feeling fit and ready to race.
